Born and raised in the Seattle Metro area, Kurt was introduced at an early age to the unique, rich character of artisan foods – like small-batch, handmade cheeses. In fact, some of Kurt’s earliest memories center on his great-grandpa Beecher who had a penchant for ripe wheels of Stilton.
For over ten years, Kurt has been quietly influencing the Seattle food scene, first through his purchase of Seattle favorite Pasta & Co in
2000, where he changed all of the ingredients to be pure and all-natural, and then through Beecher’s Handmade Cheese in 2003, which remains Seattle’s only cheesemaker while becoming nationally recognized for its artisan cheeses and cafe menu items. In 2010, Kurt’s mac & cheese even caught the attention of Oprah Winfrey and was named to her “Favorites” list.
Though no one can doubt Kurt’s creativity with cheese, his food is also appreciated for staying true to the ingredients indigenous to the Pacific Northwest, while drawing inspiration from flavor profiles celebrated around the world. It’s also no secret that Kurt loves to cook meats and fish, being particularly fond of grilling and working with pork. In fact, a visit to his “urban assault” pig mobile, Maximus / Minimus, will introduce you to a menu and food truck concept that was originally influenced by one amazing pulled pork sandwich.
